Easy, quick, cheap, looks impressive and taste delicious!
Ingredients:
- Pack of english muffins (or homemade)
- Jar of pizza sauce (or homemade)
- Fresh mozzarella (preferred over the pre-shredded bagged stuff)
- 1 Large heirloom tomato, thinly sliced
- Olive oil
- Fresh basil leaves
- Fresh oregano leaves
- Salt
Preheat the oven to 350 degrees. Separate all english muffin halves and line up on a cookie sheet- nooks and crannies facing up. Spoon a layer of pizza sauce on top of the english muffins. (I blended some fresh basil leaves into my store bought pizza sauce) Next take a slice of tomato and pat dry on both sides with a paper towel. Place one on top of the sauce and sprinkle with a bit of salt. Drizzle with a touch of olive oil. Repeat for all. Add cheese and fresh oregano leaves. Bake at 350 degrees for 25 minutes or until cheese is melted and starting to brown. Sprinkle with fresh chopped basil leaves and enjoy!
