Microwave Bread and Butter Pickles

Who knew you could make pickles, with no fancy equipment, just in your microwave! Cucumbers, onions and spices can make delicious crisp pickles in minutes!




All you need is fresh cucumbers, fresh onion, distilled white vinegar, sugar, and pickling seasoning (you can look up what spices to use if you can't find a mix).




I used 2 cups vinegar, 1 1/2 cup sugar, 1/4 cup "Ball" brand bread and butter pickling seasoning mix, 4 medium cucumbers, and 1/2 of a white onion. Just slice up your cucumber and onion, throw everything in a microwave safe bowl, microwave on high for 6 to 10 minutes (stirring once) or until the onions are translucent. 



Transfer to sterile containers and let them chill in the refrigerator until you are ready to eat them!   (Because these are not truly canned, I would recommend eating them all within 3 months, but if properly canned, they are good up to a year.)
